Recipe Fun Friday- Decadent Pumpkin Muffins

I found this recipe on my favorite online recipe site Allrecipes.com. Not only does it have a great variety of recipes, but it also has reviews for each recipe as well. I like to see how people adjust things to suit their own tastes or make a dish healthier. This particular recipe was made to be lower in fat, but you really can't tell by the taste, they were delicious! I changed a few things after reading the reviews, which I have noted here. Things I changed: I didn't have applesauce, so I used 1.5 cups of nonfat yogurt instead. I used 3 whole eggs instead of the egg whites, 1 cup of brown and white sugar each, left out the water and raisins, and added some vanilla extract as well. I wanted to replace 1 cup of flour with oats as suggested by one reviewer, but I was out of those also (yes, a shopping trip is needed;).

As I'm sure you have realized, I LOVE making muffins. I cannot wait to try these, and I am going right now to print out the recipe.

Did you use a total of 3 eggs or 4? From the reviews, it looks like some people used 4 whole eggs. (See, I've already printed it out!)

Ooh, those sound really good! I make a pumpkin recipe this week too...I'm inspired by the cooler weather. :) I'm going to have to try the muffins. Thanks for sharing the recipe!

Nikki: I used 3 eggs, but I think I'll add 4 next time. I might also add the water as well, though they were moist enough this way. Also, if you have a good muffin tin, I think it would be better to spray the tin and skip the muffin liners. They stuck a little bit, but I dealt with it. I think this is probably one of those recipes that you will make once, and then adjust to your own liking.

I never bake my muffins with liners. I have a recipe book by the Cupcake Doctor, and she says that muffins should not be cooked in liners. Cupcakes should, but not muffins. She is the cupcake doctor and should know what she is talking about, shouldn't she? If you want, I will look it up for the reason because I cannot remember it right now.
