Turkey Fried Rice
2 cups chicken broth
1 cup uncooked brown rice
2 cups cubed cooked Turkey
3 Tbsp reduced sodium soy sauce
1 egg lightly beaten
1 Tbsp canola oil
1 cup of veggies: I used zuchinni, red pepper, and mushrooms
Cook brown rice according to package directions (using chicken broth); cover and refrigerate overnight. In a bowl, combine Turkey and soy sauce; cover and refrigerate. Cook and stir egg over medium heat until completely set. Remove and set aside. In the same skillet, saute zuchinni, red pepper, and mushrooms in oil until tender (I also added garlic). Add rice and Turkey; cook and stir over medium heat for 6-8 minutes. Add reserved egg; cook and stir for 1-2 minutes more. Serve immediately.
This recipe had a few extra steps, but it was worth it. My husband loves these kind of dishes, and thought this one especially good. I doubled the recipe, just make sure you use a large skillet if you do so.

I love dishes like this where everything is all mixed together, especially when it has vegetables in it. We love zucchini but get tired of only eating it sauteed. I will have to try your recipe, but I will probably use chicken just because I don't want to cook a turkey (or paint and plant it for that matter. I'm sorry, I just can't let that go!).

And now for your question as to why I didn't participate in Nikki's challenge -- because I only cooked dinner one time last week...and it don't turn out well. I was using a recipe from a friend to make pork chops in a skillet, and I think I used the wrong cut of meat. I'll definitely participate next time, though!
Ooh, I'm going to have to try that too! I cooked a turkey in the crockpot a few weeks ago and have some in the freezer, so I'll pull it out soon.
